“Harvest Fields and making wine”

Whenever you get a chance to harvest field you really should consider doing that. Having plenty of grapes available will allow you to make the wine once you have the wine order cards ready to go. It becomes much harder to harvest fields later in the game too.

“Build a trellace in the first year”

I recommend, if possible to build a trellace, plant the pinot and harvest it i the first year. This gets you grapes immediately allowing for faster wine order fulfillments.

“Collect Orders Early”

It may seem presumptuous to start grabbing (purple) wine order cards already the first or second winter, especially with limited workers, but knowing what orders you need to fill helps you in knowing what (green) vines to plant, which grapes to convert into which wines, and when to harvest to have wines at the right ages. I am not a great strategy gamer, and having at least one order in my hand to work toward early in the game helps me get my actions in the right order from the beginning.

“Vari-culture”

One of the key paths in Viticulture to victory is to not follow the herd.

Getting more workers in worker placements always seems like a good idea. You can get more things done. But if everyone focuses on expanding their workforce you can find yourself spending money on a meeple that can give you little return value on a clogged board. Watch what others are doing.

Wine orders are the best way to victory, but again if everyone goes that path you find yourself competing for harvests and building a big cellar to leave empty.

If mobs of workers are crushing grapes and making wine before your time – focus on other VP aspects. Turn order tracking, giving tours, visitor cards, etc to get the VPs that people are treating like sour grapes.

“Work force”

On the first year I always sell my 5gold field in summer and train a worker in winter. Then on the second year I choose the extra worker bonus (#7)and now you have a great work force to start the game strong
